You might be thinking why we have 2 posts on Limoncillo as a new coffee when one was rolled out a few weeks back. Well, this new coffee fresh on our racks is from the same farm, of the same coffee varietal, but processed in a different way, which makes it quite a different cup.

This coffee is a pulped-natural processed coffee, a method of processing coffee that involves the removal of the skin from the coffee but instead of fermenting and removing the mucilage (as usually done so in a washed process coffee), the coffee is dried with the mucilage (all or some) attached to the parchment layer. Back in 2013, we had the same coffee as a component of our very first Four Chairs seasonal blend. This year, when we cupped this coffee again side by side with the washed process Javanica, we thought that it might be interesting to feature coffees from the same farm, same varietal but processed differently. This will give our customers an insight to how different processing methods can alter the cup profile drastically. 

We enjoy the complexity of this cup tremendously. It is floral upfront, followed by tropical fruit notes in the mid palate and ending with a black tea finish. With milk, it taste like banana chocolate milk infused with lavender.

At Nylon, we are showcasing the washed Limoncillo Javanica as a filter coffee and the pulped natural one as a single origin espresso. The different brewing methods create a contrasting coffee experience that makes it all the more interesting.
